Directions
- In a bowl, scramble the 2 eggs and set them aside.
- Now cut your mushrooms in quarters, cut a nice thick slice of tomato for grilling and butter your Portuguese roll slices.
- In a pan, heat up a bit of oil, then start frying the mushrooms. Season to taste.
- Move them to the side and in the same pan sear the Cocktail Viennas and tomato.
- In a non-stick pan, toast the lightly buttered Portuguese roll slices. Remove from pan and set on a plate.
- Wipe pan clean and melt a knob of butter. Add your eggs and slowly stir to make delicious fluffy eggs.
- On the one slice, place the eggs. On the other slice, place the Farm Smoked Ham. Add the Cocktail Viennas, tomatoes and mushrooms to the plate.
- Garnish with chopped chives and parsley.

- 2 packs Hartlief Cocktail Viennas
- Butter (for bread and scrambled eggs)
- 2 punnets button mushrooms
- 2 medium tomatoes
- Salt and pepper for seasoning
